Doze off in highchair and our chicken chop lunch
I was too engrossed in my housework (ooh, something worth celebrating) and by the time I wanted to prepare lunch, it was already 12pm+. I think Lia is hungry for when I asked if she wanted some cheese, she nodded and proceed to gobbled up two slices in record time. Come the third slice, she dozed off even before she starts on it...
It is my first time seeing her doze off in her highchair; my baby must have been real tired for she'd woke up early. I carried and laid her on the playmat for her to continue her nap. She had cheese bits over her dress and I do not want to dirty her bed. It must have been the humid weather for Lia woke up and wasn't able to fall back into sleep. I asked if she would like to have her lunch, she nodded and proceed to finish up that third slice of cheese while I rush out lunch.
This is what I whipped up...
Chicken chop with blanched broccoli and mashed potatoes. Lia shared it with me! =)
Let me share the ingredients and steps! (The following serves one mommy and her kid!)
Ingredients:
1 big chicken drumstick, de-boned
1 medium potato - remove skin and diced
2 medium shiitake mushrooms - sliced
A few florets of broccoli
1-2 tbsp mayonnaise
Garlic - sliced thinly
Sea salt
Olive oil
Butter
A bowl of cold water
For marinating:
Teriyaki sauce, oyster sauce, brown sugar, olive oil, basil leaves (bottled herbs), potato starch. (Sorry, I do not have the exact amount I used because I estimate them every time.)
Steps:
First, marinate the chicken drumstick. Leave it aside covered. Then, we'd proceed to cook the sides - mashed potatoes and broccoli.
Mashed potatoes and broccoli:
1) Boil some water in a saucepan, dump in potatoes when water boils together with some olive oil.
2) When the potatoes are slightly soften, add in broccoli and a little sea salt.
3) When all are cooked, drain the potatoes, keep the broth, and dump the broccoli into the bowl of cold water to stop it from cooking further.
4) Placed potatoes in a big bowl for mashing, add some broth, butter and mayonnaise. Or you can use a blender for the job if you are preparing a large serving.
5) When you are done, scoop a ball of mash and place the broccoli (drain it first) on your serving plate, set aside.
Chicken drumstick:
1) Heat olive oil in a frying pan, stir fry garlic and shiitake mushrooms and set aside when done.
2) With the same frying pan, add a little more oil and place chicken drumstick in it. Use medium flame. I am not sure of the cooking time, but when the sides turn golden brown, it should be almost there. Else, you can check it by cutting through the thickest part of the meat and see if it's cooked.
3) When cooked, place chicken drumstick on your serving plate, topped it off with the garlic and shiitake mushrooms.
4) Enjoy your meal! ;p
