Sweet & sour pork
Some days back, I cooked another one-dish-meal, sweet & sour pork with brown rice. It is easy, and I used frozen pork for the dish. I liked PorKee, they have convenient packs and I liked how they cut up their sweet & sour pork nicely into cubes. The recipe is below, I hope I have remembered all points correctly.

You need:
250g (1/2 pack) Porkee frozen pork cubes
2 tbsp canned corn - liquid drained
1 small red pepper
some lettuce romaine (Or iceberg lettuce)
cooked brown rice
1/2 cup oil for shallow frying
1 clove garlic & 1 shallot
some dried parsley flakes or your favourite dried herbs
Metal strainer or kitchen towel on plate
A pair of long chopsticks.
Pork marinate:
1 tbsp oyster sauce
1 tbsp teriyaki sauce
1 tbsp Chinese wine
1 tsp sesame oil
1/2 tsp dried herbs - I used basil
1 tsp brown sugar
1 tsp potato starch
Sweet & sour sauce:
1 tbsp oyster sauce
1 tbsp ketchup
1/2-1 level tbsp brown sugar
60ml warm water
Thickening:
1 tsp potato starch in 1 tsp water
Steps:
1) Marinate pork cubes and set aside, covered.
2) Combine ingredients for sweet & sour sauce, mix well and set aside. In a different bowl, combine potato starch, water and set aside too.
3) Dice the red pepper, chop up garlic, and slice shallot.
4) In a medium saucepan, heat oil and shallow fry pork cubes until fully cooked.
5) Dish up and leave in strainer/plate with kitchen towel to catch excess oil.
6) Remove oil from saucepan (But there's no need to wipe it all off)
7) Using the same saucepan which is slightly oiled, stir fry garlic and shallots until fragrant.
8) Add in corn and red pepper and stir fry a little to mix them. Cover saucepan and let it cook for a minute. Dish up and set aside.
9) In the same saucepan, pour sauce mixture and bring it to a boil. Prepare your potato starch (and water) by stirring it evenly. Once mixture boils, add in the potato starch (and water) whilst stirring continuously in the saucepan. Stir for around 10 seconds. Let it simmer for another 10 seconds and dish up in a separate bowl.
To serve:
Scoop enough brown rice to fill a small rice bowl, overturn it gently onto one side of your plate. Lay lettuce romaine at the other side, add pork cubes and let it sit on the lettuce, followed by corn and red pepper. Top it off with a tbsp of sweet & sour sauce and some dried herbs!

P/S: I cooked the sweet & sour sauce separately because James is often late for dinner. The corn and red pepper might get overcooked if I leave it soaked in the sauce. If you are serving this dish immediately, you can cook the sweet and sour sauce together with the corn and red pepper following the same steps, just don't dish them up at step 8.
