Minced pork patties
A recipe I learnt from my mother-in-law, learnt it because both my man and kid loves it! ;p
Ingredients:
Minced pork
Tau kwa (bean curd - mashed)*
Yellow onions (chopped finely)
Curry leaves (chopped finely)#
Egg (beaten)
Oil for deep frying, sesame oil, potato starch, salt & pepper to taste
(Chop up some water chestnut and add it in if you like more crunch!)
*Oops, again, there's no exact quantity on the ingredients I used, I will try keep track next time...
Steps:
1) Heat oil. I used a medium saucepan and added like 4cm of oil in height, just enough for my meat patties to swim in and be fried.
2) Mix minced pork, mashed bean curd, onions and curry leave in a big bowl. Add your seasonings. Gradually add in beaten eggs until a firm paste is formed.
3) Using a tablespoon to gauge, scoop, lightly mould and flatten meat patties on your palm.
4) Lower them into saucepan and deep fry, remember to flip them and cook until both sides turn golden brown.
Lia gets mini patties...
For mini ones, use a teaspoon to scoop instead of a tablespoon. =)
Note:
*My mother-in-law said it is not advisable to substitute tau kwa with tofu because the latter tends to be quite watery when mashed. Not too good if you are deep frying the patties as that will cause a lot of oil splattering!
#You can use spring onions or other greens you like. I only have curry leaves in my fridge at that point of time!
