Stir fry noodles

James had to work late today and it was just me and my baby at dinner. This is what we had...

Stir fry noodles! =)



I am a noodles person and when it comes to cooking a one-dish meal, I would do either Chinese style noodles or western style noodles (pasta).

To serve a mommy and her kid, here's what you need!

Ingredients:
A packet of Koka non-fried plain noodles
Red and green peppers - cut up into strips
1/4 of a big chicken breast - cut into medium thin pieces
3 shrimps - shelled and de-veined
3 button mushrooms - sliced
1 crab stick - cut into small pieces
Garlic and shallots - chopped up, curry leaves
1 tbsp vegetarian oyster sauce, 1 tsp dark soy sauce and olive oil for stir frying.

Chicken breast's marinate
1/2 tbsp chinese wine
1 tsp sesame oil
1 tsp light soy sauce
1 tsp potato starch
(I estimated the marinate for I always forgot to keep track on the amount of sauces I used)

Prep:
1) Marinate chicken breast. Leave aside with cover.
2) Have a big bowl of ice water ready.
3) Cook noodles in boiling water and strain when 3/4 cooked. Dump strained noodles into ice water to stop it from cooking any further so as to retain its springy-ness. Leave to stand.

Cook:
1) Heat up oil in a medium saucepan. Stir fry chicken breast, on it own. Dish up and set aside when done.
2) With the same saucepan, add a little more olive oil, saute garlic and shallots until fragrant. Add in curry leaves.
3) Drain noodles from ice water.
4) Add in red/green peppers, button mushrooms, crab stick pieces and shrimps and continue to stir fry.

5) Add in drained noodles, even it out and add in vegetarian oyster sauce and dark soy sauce.
6) Even out the sauces (use a pair of chopsticks for some light tossing), add some (hot) water if it gets too dry.
7) Cover up and let steam cook it for another minute or so.
8) Dish up and top it off with the stir fry chicken breast!

Note: I actually intended to cook the chicken together with everything else but I forgot to add it in, realising it only when I'm all done. So I had to stir fry the chicken again separately and that made me find out that the chicken tasted better this way!

I loved spicy foods but having to share the same dinner with my kid, I count on this instead!



Cooked some non-spicy noodles and later turned them into... fiery noodles! Hah!

Lia saw me snapping pics of my noodles and demanded that I take pictures of her noodles too. And so, I took, a picture of her and her noodles. Really adorable with her pouted lips, a pity it's blur.
