I eat what she eats (mixed browns fish porridge with pumpkin)
On lazy afternoons, this is what I'd cook for the both of us.
Mixed browns (brown rice) fish porridge with pumpkin (and sometimes, it's corn)
Easy, and nutritious, I use the crockery pot for the task. :)
(Read: no need to watch fire)
Here's what you need to serve a mommy and her 2.5 years old todd.
Ingredients:
Half cup mixed brown rice - washed
2-3 cups hot water (you may need more, just standby your thermo flask lah)
10 slices of fish (I used 'batang' - soak the slices in (sea) salt water prior to cooking for a smooth bite. Else batang's really tough and dry)
Pumpkin - in chunky cubes
A small crockery pot
Steps:
1) Add the rice and hot water into the crockery pot. Leave to cook for approx 1.5 hours, checking and stirring occasionally. (All pots cook differently, do a gauge on your own)
2) Add in pumpkin and leave it to cook for 20 minutes.
3) Lastly, add in fish slices one at a time, in an overlap manner with porridge in between, and leave it to cook for a further 10 minutes.
4) When fish slices are thoroughly cooked through, power off your crockery pot and SERVE!
